- 1 1/2 cups flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons melted butter
Combine the flour, baking powder, salt and sugar in a large bowl, sifting is nice but blending works. Make a well in the center or just pour in the milk, egg and melted butter; mix until pretty smooth, but don't overdo it.
Heat a lightly oiled griddle or frying pan over medium high heat until drops of water dance on the pan. Scoop the batter onto the griddle, silver dollar size and up. Large pancakes can be hard to turn. Brown on both sides and serve hot with butter, syrup, marmalade, or your favorite topping.
